Late fall fishing is second-to-none in the Florida Keys. The sailfishing is spectacular and the reef fishing - which includes yellowtail snapper, grouper, mangrove snapper and lots of kingfish - is very impressive. On my boat, 95% of our fishing is done with live bait such as ballyhoo, pilchards, shrimp and pin fish. Live bait really draws in the fish because it’s fresh and catches the eye with movement!
As a captain for many years, I always have my fair share of fresh fish available. I love to cook and have built up a ton of great seafood recipes over the years. When we hit the docks with your catch, I’ll give you a recipe that will work best with your catch, or we can take your catch to one of Hawks Cay Resort’s restaurants and have the chef prepare it for you. Nothing tastes better than fish you’ve caught yourself!
